Temp Stable Powders

Hey guys, question for you all. Why would anyone use a non temp stable powder? I know most of the best temp stable powders are hard to find. I ran strictly the most temp stable powders I could find until recently I decided to pickup Win748 which isnt really known for its temp stability. Meters great and I got some awesome ES SD out of it but when the weather heated up the velocity rose a ton. Also when the barrel heated up and a round cooked too long in the chamber(PRS) I was getting significant impacts high at 1k. So the question is, for rifles, why would anyone buy a powder that is not temp stable. I can see it not being a big deal when you're loading bulk plinking rounds but I'm talking hunting and long range.

I use bothH4350 and Varget, both temp. Stable.

nowadays it is so easy to get a temp stable powder from a huge selection, for any caliber/bullet combo. i Could see no reason not to use such powders unless you find a super load in an older powder and you live in a very stable temp. Zone.
